Protein French Toast





I eat oatmeal every single morning, so I decided to switch it up for once. This is a no fail recipe and higher protein than normal french toast!


{Vegan, High Protein, Low Sugar}


You will need:

  • Frying pan

  • Spatula

  • Shallow dish or tupperware

  • Small whisk or fork

  • Cooking spray (optional)

Ingredients: Serves 1 (multiply recipe easily to serve more people)

  • 2 slices Bread

  • 2 oz Plant Milk (I used soy, unsweetened)

  • 20 grams Vanilla Protein Powder

  • 6 tbsp (76 grams) JUST Egg

  • 1/2 tsp Vanilla Extract

  • 1/4-1/2 tsp Cinnamon, ground

  • 1 packet Stevia (optional)


Instructions

  • Heat a frying pan over medium heat and spray with cooking oil if needed.

  • In a shallow dish or tupperware container, add all of the ingredients except the bread.

  • Whisk the ingredients until fully incorporated.

  • Once the pan is heated, dip in your slices of bread into the mixture until fully coated on both sides.

  • Place your coated bread slices on the heated pan and cook each side for about 2 minutes OR until dark, golden brown.

  • Continue to flip and cook the french toast slices until there are no wet spots of the mixture left.

  • Serve immediately with toppings such as maple syrup, fruit, or whipped cream!


Notes:

I used a lower carb bread from ALDI

I used Purely Inspired Organic Plant Protein, but you can use any protein powder

Any plant milk will work
