Easiest Protein Pesto (Oil & Nut Free)





You would not believe the flavor in this pesto! It's completely oil-free and nut free...But I am serious, the flavor is IDENTICAL!


{Vegan, High Protein, Oil Free, Sugar Free, Nut Free, Gluten Free}


You will need:

  • High speed blender or food processor

  • Small spatual (optional, to get all of the pesto out of the blender)

Ingredients:

Makes about 3/4 - 1 Cup of Pesto

  • 150 grams (1 cup) Edamame, shelled

  • 1/4-1/3 cup Basil leaves, fresh (Packed into the cup)

  • 1 cup Spinach, fresh (Packed into the cup)

  • 1 tbsp Nutritional yeast

  • 1/4 of a Lemon

  • 30 ml (2 tbsp) Soy milk, or any plant milk

  • 1/8-1/4 tsp Salt (to your taste)

  • 1/4 tsp Garlic powder or 1 clove (optional)


Instructions:

  • Thaw the frozen edamame beans on the counter (buy the pre shelled) OR place the edamame in a small bowl with 1/4 cup water and microwave for 30 seconds to 1 minute to thaw the edamame

  • In a blender or food processor, add all of the ingredients and blend until fully combined


Notes:

I used Whole Foods frozen shelled edamame

Pack the basil and spinach as much as you can into the blender

Add more plant milk if needed, up to 1/2 tbsp

I did not use garlic, but feel free to add it. It's probably really good
