Vegan Peanut Butter Blossom Cookies

Happy Valentine's Day! Here is an easy recipe for you to whip up tonight for your significant other, friends or family. Have a great day ❤️

{Vegan, Moderate Protein}

You will need:

  • Baking sheet

  • Parchment paper, foil, silicone sheet

  • Mixing bowl

  • Large spoon/mixing spatula

  • Measuring spoons

"All you need is love." - The Beatles

Ingredients: Serves 5

  • 1/4 cup Peanut Butter, drippy/creamy

  • 1.5 tbsp Flour

  • 1/6 cup White Sugar

  • 1/2 tsp Baking Soda

  • 1 tbsp Plant Milk, any

  • 1/2 tsp Vanilla Extract

  • 1/8 tsp Salt

  • 5 Chocolate Pieces

Instructions

  1. Preheat the oven to 350 degrees ℉.

  2. Like a baking sheet with parchment paper.

  3. In a small bowl, combine all of the ingredients except the chocolate pieces.

  4. Stir the ingredients until the dough becomes less sticky, must be fully incorporated.

  5. Roll the dough into 5 even balls.

  6. Press your chocolate pieces into the center of the dough balls. Do not press too hard to breakthrough the cookie dough.

  7. Bake in the oven for 11-13 minutes.

  8. Allow to cool for 5-10 minutes on the baking sheet before transferring to a cooling rack.

Notes:

If your peanut butter is not drippy, it will be hard to stir. Heat up your peanut butter if it's tough before hand (about 10 second intervals) until your peanut butter is creamier.

I have not tried with other flour.

For smaller cookies, make more dough balls and increase your chocolate pieces to ensure there is enough for each cookie.
