Sweet Corn & Tuna Pasta (Vegan)

Does anyone remember the viral sweet corn & tuna pasta from a couple years ago that body builders would eat because it was an easy low fat and high protein meal? Well, I just made it vegan! The plant-based tuna in water has the BEST flavor, texture, and even smell of any other vegan tuna brands I have tried. It is so similar that it would fool anyone. Your tastebuds are going to love this super easy lunch recipe.
{Low Sugar, Low Fat, Nut Free, High Protein, Vegan}
You need: Colander, small sauce pan, spatula or spoon
This recipe makes: 1 serving

Ingredients: Serves 1 / $2.76 per recipe
2 oz (56g) Pasta, any variety ($.35)
1 can of unMEAT tuna style flakes in water ($2.06)
1/2-1 tbsp Mayo, vegan ($.067)*
1/2 cup Sweet corn, canned ($.28)
Salt & Pepper, to taste
Instructions
Boil a pot of water over high heat.
Using a colander, drain the water from inside the can of corn.
In a bowl, stir together 1/2 cup of corn, 1/2-1 tbsp vegan mayo, the whole can of unMEAT tuna tyke flakes, and salt & pepper to taste.
When the pasta is finished cooking, drain the water and add the cooked pasta to the bowl with your sweet corn & tuna mixture.
Optional: The corn and tuna care not hot like the pasta, so it will be cold when serving. You can microwave the bowl of your sweet corn & tuna pasta OR place the cooked pasta back into the drained pot and add your sweet corn & tuna to reheat to serve hot.
*Notes:
Price of mayo per 1/2 tbsp.
Any variety of pasta works, but the nutritional info is based on Barilla Protein Plus pasta.
