Seitan Sausage

I LOVE seitan! Seitan is a plant-based person's best friend as seitan is very high in protein. If you do not know what seitan is, it is just straight gluten directly from the wheat plant. Unfortunately, seitan is not a gluten free, but it is low carb and low fat. It is the perfect protein! Use seitan for breakfast scrambles, sausage wraps, pastas, grill it, fry it, serve as a side, or in a macro bowl.


{Vegan, High Protein, Sugar Free, Low Fat, Low Carb}


You will need:

  • Foil

  • Steamer

  • Blender

  • Large bowl

  • Silicone spatula

  • Tofu press (optional)

Ingredients: Serves 10

  • 1-14 oz block Extra Firm Tofu (In water needs to be pressed or sealed pack)

  • 2/3-3/4 cup Water (Start with 1/3 cup if your tofu is still very watery)

  • 2 tsp Bouillon (Vegetable, vegan chicken, or vegan beef broth)

  • 4.5 tbsp Nutritional Yeast

  • 3 tbsp Soy Sauce

  • 1 tbsp Garlic Powder

  • 2 tsp Onion Powder

  • 1.5 tsp Cayenne Powder

  • 1.5 tsp Dried Herbs (Thyme, italian, oregano, basil, etc.)

  • 1.5 tsp Smoked Paprika

  • 1/2-1 tsp Liquid Smoke (optional)

  • 180 grams (1.5 cups) Vital Wheat Gluten


Instructions

  1. Press tofu packed in water as best as you can for at least 20 minutes.

  2. Fill your steamer with water and let it come to a boil. When it starts to steam, it is ready for use.

  3. In a blender, blend all ingredients form tofu to liquid smoke until smooth. Scrape the sides if needed.

  4. Pour the blended ingredients into a large bowl and add the vital wheat gluten.

  5. If you have a kitchen aid mixer, knead the dough with the kneading attachment OR combine the ingredients by hand.

  6. Once combined, knead the dough for 5 minutes. The longer you knead, the least holes will be present in your seitan.

  7. Separate the seitan into 10 equal pieces and form into sausage logs.

  8. Take out 10 sheets (12x12 in) of aluminum foil. Place the sausage logs on the center of one of the edges of the foil and tightly roll it up and twist the edges.

  9. Place the rolled up seitan sausages into a steamer (you may have to cook in batches) and steam for 30 minutes.

  10. Repeat step 9 until all sausages are steamed.
