Asian Style Gochujang Glazed Vegan "Turkey" Meatballs



I think this recipe is my #1 favorite at the moment. I couldn't believe the texture of these vegan meatballs. Before I was vegan, I ate turkey meatballs all the time (my favorite food is spaghetti). Coming up with this recipe was life changing, so trust me when I say this recipe will knock your socks off. It's high in protein and low in fat - all around great addition to a pasta dish or to glaze!


{Vegan, Low Fat, High Protein}


You will need:

  • Baking sheet

  • Parchment paper, foil, silicone sheet

  • Mixing bowl

  • Large spoon/mixing spatula

  • Measuring spoons

Ingredients: Serves 4

  • 1 package of Trader Joes' Turkeyless Ground

  • 1 tbsp Flax Seed, ground

  • 3 tbsp Water

  • 1/3 cup Plain Bread Crumbs

  • 2 tbsp Soy Sauce

  • 1 tsp Garlic Powder

  • 1 tsp Ginger, ground

  • Sesame Seeds (optional)

  • Green Onion, sliced (optional)

Sauce

  • 1 tbsp Gochujang Paste

  • 1 tbsp Soy Sauce

  • 1 tsp Sesame Oil

  • 1 tsp Rice Vinegar

  • 1/2 tsp Garlic Powder

  • 1/2 Ginger, ground


Instructions

  1. Preheat the oven to 400 degrees ℉.

  2. Like a baking sheet with parchment paper.

  3. In a small bowl, combine the ground flax seed and water. Let it sit for 5 minutes.

  4. In a large mixing bowl, combine the rest of the meatball ingredients. Stir until fully combined.

  5. Add in the wet flax seed mixture to the large bowl. Stir until the flax seed is fully incorporated.

  6. Next, form 18 "meatballs" by rolling the some of the mixture between your hands.

  7. Place all of the "meatballs" on the baking sheet. Make sure to leave some space between them.

  8. Bake for 15 minutes.

  9. While the meatballs are baking, in a small sauce pan, combine the gochujang glaze ingredients. Stir over low heat until simmering.

  10. Once fully cooked, they will be browned, add into the sauce pan with the gochujang glaze.

  11. Coat the meatballs evenly with the glaze. Turn the heat up if needed to thicken the glaze.

  12. Serve with sesame seeds and sliced green onion.

Notes:

You can try this recipe with any other vegan grounds, I just have tried that yet.
